About the dish
Davanti marinates beef tongue with herbs and spices, cooks it over low heat for four hours, then grills it. The long cooking makes the tongue tender and deeply savory; the grill adds a roasted edge, while salsa verde brings brightness and giardiniera a crisp, tangy contrast.
Tongue has a place of honor in Piedmont’s elaborate bollito misto. Regione Piemonte counts it among the seven canonical cuts traditionally accompanied by an array of sauces. That ceremonial meal reaches its yearly high point around the historic December cattle fair in Carrù, where slow-cooked meat becomes a celebration of place and season.
