The story

About the dish

House-made sausage crumbs bring concentrated savory depth, spicy rapini adds leafy bitterness and heat, and mozzarella rounds both with mild, milky richness. Together they create a lively progression from savor to spice to a soft finish.

The name carrettiera opens a window onto Sicily’s traveling carters. The Accademia Italiana della Cucina notes that spaghetti ’a carrittera took their name from these workers, while Visit Sicily records that their horse-drawn carts carried goods and became brightly painted symbols of island culture. Here, the name carries that roadside spirit into a Roman pinsa.
