The 48-hour-leavened dough carries bright marinara, melted mozzarella and the intense chile warmth of homemade ’nduja. Eggplant adds a soft, earthy sweetness, while ricotta brings a cool, milky richness that rounds the heat without erasing it.
’Nduja is inseparable from Spilinga, a Calabrian hill town in the province of Vibo Valentia. Regione Calabria describes the spreadable pork-and-chile sausage as one of the region’s culinary symbols; in Spilinga, its culture is celebrated each August with food, music and community gatherings. Its vivid heat turns this pizza into a small taste of Calabria’s famous peperoncino tradition.
