The story

About the dish

Red snapper and shrimp provide clean, gently sweet seafood flavors. Grape tomatoes add juicy acidity, extra-virgin olive oil gives the dish roundness, and garlic and basil layer in savory warmth and fresh perfume without overwhelming the fish.

Acqua pazza names a Neapolitan way of cooking fish in a small amount of water with olive oil, garlic and little tomatoes. The tradition is memorable for its economy: a short list of everyday ingredients creates a fragrant cooking liquid while keeping the fish at the center of the plate.
