The story

About the dish

Davanti brings together linguine, cuttlefish and the animal’s own ink. Cuttlefish has a gentle sweetness and clean ocean flavor; its ink deepens the pasta with briny, mineral savor while giving every strand its dramatic black color. Those three ingredients keep the character focused squarely on the sea.

Cooking cuttlefish in its ink belongs to the food culture of Venice and the surrounding lagoon, where wetlands have shaped both livelihoods and the table. The Veneto regional guide places cuttlefish among the characteristic foods of this waterside landscape. The ink is not simply a colorant: it is part of the animal and an ingredient in its own right, turning the catch into both sauce and seasoning.
