Davanti’s Pizza del Pastore tops 48-hour-leavened dough with roast lamb leg, potatoes, bell-pepper sauce, mozzarella and sheep’s-milk cheese from Lira Rossa. Lamb and potatoes make the pizza hearty; the pepper sauce supplies mellow sweetness; mozzarella softens the savory roast; and sheep’s cheese adds a more pronounced, tangy finish.
Del pastore means “of the shepherd,” a name that opens a window onto Italy’s pastoral culture. UNESCO recognizes transhumance—the seasonal movement of herders and livestock along traditional routes—as living heritage practiced in Italy and beyond. Those journeys shaped landscapes, festivities, family knowledge and food production.
