About the dish

Davanti’s Pizza Marinara Ritrovata spreads imported Italian tomatoes across 48-hour-leavened dough, then adds anchovies, Taggiasca olives, capers, oregano and extra-virgin olive oil. Tomato supplies sweetness and acidity; anchovies and capers bring concentrated salinity; the olives add a fruity, gently bitter note; and oregano lifts the whole pizza with a warm herbal perfume.

Its title returns to the Marinara tradition of Naples, where a few elemental ingredients became one of the city’s defining pizzas. More important than any single origin legend is the living craft around it: UNESCO recognizes the art of the Neapolitan pizzaiuolo as knowledge passed through workshops and families, from shaping and topping the dough to managing the oven. Ritrovata—“rediscovered”—is a fitting invitation to taste that culture anew.
