About the dish

Davanti rolls fresh lasagna pasta around cooked prosciutto, mozzarella, spinach and ricotta, then bakes the rosettes au gratin with light béchamel and Parmigiano. Prosciutto and Parmigiano bring savory depth, the two fresh cheeses make the center soft and milky, and spinach adds an earthy counterpoint beneath the browned finish.

The cut spirals resemble little roses, which gives rosette their name. Modena’s municipal archive includes rosette al forno in a menu built around Modenese and Emilia-Romagna traditions, while the city still recognizes long-running fresh-pasta shops as historic businesses—evidence that handmade pasta remains part of Modena’s living civic culture.
