The story

About the dish

Whole-grain linguine carries sun-dried tomato, olives, capers, anchovy, chile, garlic, extra-virgin olive oil and pecorino. The result is salty, spicy and aromatic, with toasted breadcrumbs absorbing the seasoned oil and adding a crisp counterpoint.

Stroncatura comes from the Gioia Tauro plain in Calabria. Regione Calabria traces the dark pasta to flour and bran left from wheat milling, a humble beginning for a food now recognized among the region’s traditional products. In 2015, it was even chosen to represent Calabria’s culinary heritage at Expo—a striking journey from milling remnants to regional emblem.
