About the dish

Slow cooking allows Carnaroli rice to release enough starch for a creamy texture while the grains retain their shape. White truffle brings the defining sensation: an enveloping woodland aroma with savory, gently allium-like notes that turns a spare bowl of rice into something luxurious.

Piedmont calls the Alba white truffle its white gold. VisitPiemonte notes that it grows across the Langhe, Roero, Monferrato and Tortonese, and that just a little freshly grated truffle can transform risotto. The hunt is cultural as well as culinary: a trifulau searches the woods with a trained dog, or tabui, following an aroma hidden underground.
